Description

This is the very best veggie soup! It ’ s filled with fresh veggies and experienced with a lot of spices and herbs for remarkable taste. Plus, it ’ s dairy-free and vegetarian.


Components

  • 2 ribs celery, very finely sliced
  • 4 5 cloves garlic, minced
  • 1 28 oz can diced tomatoes, undrained
  • 6 cups veggie broth
  • 2 little red potatoes or Yukon Gold, cut into – inch dice
  • 1 medium zucchini, cut into – inch dice
  • 12 oz fresh green beans, sliced
  • 2 cups frozen corn
  • 2 bay leaves
  • teaspoon curry powder
  • 1 teaspoon Italian flavoring
  • -1 teaspoon sea salt
  • teaspoon ground pepper
  • 1 Tablespoon lemon juice
  • sliced fresh thyme and parsley, for topping
  • bread or crackers for serving

Guidelines

  1. Heat a big stockpot or dutch oven over medium heat on the stovetop. Include oil. As soon as warm, include onion, carrot, celery and garlic. Season with salt and pepper. Cook 10 minutes or till veggies hurt and aromatic, stirring sometimes.
  2. Uncover and stir in curry powder, Italian flavoring and lay leaves. Prepare 1 minute, stirring continuously. Include tomatoes, broth, potatoes, zucchini, green beans and corn. No requirement to thaw the corn, simply toss it in frozen.
  3. Boost heat to high and give a boil. Cover and minimize to a simmer. Prepare for about 25-30 minutes or till veggies hurt. Get rid of from heat.
  4. Get rid of bay leaves and stir in lemon juice. Taste and season with extra salt and pepper, if required
  5. Serve warm with fresh thyme and parsley for topping. Serve with crusty bread and crackers.
